Ingredients:

1 lb (450g) smoked sausage or chicken sausage, sliced into ½-inch rounds

1½ lbs (680g) baby potatoes, halved

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 red onion, thickly sliced

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

½ tsp dried thyme or Italian seasoning

Salt & black pepper to taste

Optional: Fresh parsley, chopped (for garnish)

Optional: Grated Parmesan (for extra flavor at the end)

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Prep the ingredients:

Slice sausage into rounds.

Halve the potatoes (quarter if large).

Slice peppers and onion.

 

3. Season everything:
In a large bowl, toss sausage, potatoes, peppers, and onions with olive oil, garlic powder, paprika, thyme, salt, and pepper until well coated.

4. Spread on sheet pan:
Arrange everything in a single layer on the baking sheet. Make sure potatoes are cut-side down for better crisping.

5. Bake:
Bake for 35–40 minutes, flipping halfway through, until potatoes are golden and fork-tender.

6. Serve:
Garnish with chopped parsley and a sprinkle of Parmesan if desired. Serve hot and enjoy!
