Ingredients:

2 slices of bread (sourdough, whole grain, or your favorite)

1 ripe avocado

1–2 eggs (fried, poached, or boiled—your choice)

1 tbsp olive oil or butter (for toasting)

Salt and black pepper (to taste)

Optional toppings:

Red pepper flakes

Everything bagel seasoning

Cherry tomatoes (halved)

Microgreens or fresh herbs (parsley, cilantro)

Feta cheese or goat cheese

Lemon juice

1. Toast the Bread:
Toast your slices of bread until golden and crispy. You can butter them lightly or use olive oil if desired.

2. Mash the Avocado:
In a small bowl, mash the avocado with a fork. Season with salt, pepper, and a squeeze of lemon juice for brightness.

3. Cook the Egg:

Fried: Heat a little oil in a pan and fry the egg sunny-side up or over-easy.

Poached: Gently poach the egg in simmering water with a splash of vinegar.

Boiled: Boil the egg for 7 minutes (jammy) or longer if you prefer it hard-boiled.

 

4. Assemble:
Spread the mashed avocado evenly over the toast. Place the egg on top.

5. Top & Serve:
Sprinkle with red pepper flakes, herbs, or your favorite toppings. Serve immediately!
