Base Ingredients:

4 slices whole-grain or sourdough bread, toasted

2 ripe avocados, mashed

1 tbsp lemon juice

Salt and pepper, to taste

Instructions for the Base:

1. In a bowl, mash the avocados with lemon juice, salt, and pepper.

2. Toast the bread slices to your preferred crispiness.

3. Spread the mashed avocado evenly over each slice.

 

1. Tomato & Feta Avocado Toast

½ cup cherry tomatoes, halved

¼ cup crumbled feta cheese

Drizzle of olive oil

Fresh basil (optional)

Top one toast with cherry tomatoes, crumbled feta, a drizzle of olive oil, and fresh basil if using.

 

2. Scrambled Egg Avocado Toast

2 eggs

1 tbsp milk (optional, for fluffiness)

Salt and pepper

1 tsp butter

Scramble the eggs with butter, season with salt and pepper, and spoon over the avocado toast.

 

3. Garlic Mushroom Avocado Toast

1 cup mushrooms, sliced

1 clove garlic, minced

1 tsp olive oil

Salt and pepper

Sauté mushrooms and garlic in olive oil until golden. Season and place over the avocado spread.

Red chili flakes (to taste)

Everything bagel seasoning (or sesame + onion + poppyseed mix)

Drizzle of olive oil or hot honey (optional)

Sprinkle chili flakes and seasoning over the avocado, and drizzle with oil or honey for a kick.
