Ingredients:

1 ripe avocado, diced

2 boiled eggs, peeled and sliced

3 cups fresh spinach leaves

1 small red onion, thinly sliced (optional)

Cherry tomatoes, halved (optional)

Salt and pepper, to taste

Olive oil (1-2 tablespoons)

Lemon juice or vinegar (1 tablespoon)

 

Instructions:

1. In a large bowl, add fresh spinach leaves.

2. Add diced avocado and sliced boiled eggs on top.

3. (Optional) Add sliced red onion and cherry tomatoes for extra flavor and color.

4. Drizzle olive oil and lemon juice (or vinegar) over the salad.

5. Season with salt and pepper to taste.

6. Gently toss everything together until evenly mixed.

7. Serve immediately and enjoy!
