2 large cucumbers, thinly sliced
1/4 cup rice vinegar
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp honey
2 cloves garlic, minced
1 tsp grated ginger
1 tsp red pepper flakes (adjust to taste)
2 tbsp toasted sesame seeds
2 green onions, sliced
Instructions:
1. Prep the Cucumbers:
Place the thinly sliced cucumbers in a bowl. For extra crunch and to reduce water, lightly salt them and let sit for 10 minutes, then drain and pat dry.
2. Make the Dressing:
In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, garlic, ginger, and red pepper flakes until well combined.
3. Combine:
Pour the dressing over the cucumbers. Add sliced green onions and toasted sesame seeds.
4. Chill & Serve:
Toss everything well. Refrigerate for at least 15–20 minutes to let the flavors meld. Serve cold.
