For the lamb chops

8 lamb rib chops

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon dried oregano

For the Parmesan coating

13 cup grated Parmesan cheese

1 tablespoon finely chopped fresh parsley (plus extra for garnish)

Zest of 1 lemon

Pat the lamb chops dry with paper towels. This helps achieve a nice sear when frying.

In a large bowl, mix olive oil, minced garlic, salt, pepper, paprika, and oregano.

Rub this marinade all over the lamb chops, coating both sides. Let them marinate at room temperature for 15-20 minutes (or up to 1 hour in the refrigerator).

In a small bowl, combine Parmesan cheese, chopped parsley, and lemon zest. Set aside.

Heat a large skillet over medium-high heat. Add a drizzle of olive oil to the pan.

Place the lamb chops in the hot skillet. Sear for about 3-4 minutes on each side, or until golden brown and cooked to your preferred doneness (internal temperature of 135°F for medium-rare).

In the last minute of cooking, sprinkle the Parmesan mixture generously over the lamb chops and allow it to melt and crisp slightly.

Remove the lamb chops from the skillet and rest for 5 minutes to let the juices redistribute.

Garnish with additional parsley and serve hot.
