Ingredients:

1 cup cottage cheese

2 large eggs

1/4 cup rolled oats (optional, for added texture)

1/2 teaspoon baking powder

1/4 teaspoon vanilla extract

Pinch of salt

 

Instructions:

1. Make the batter:
Add all ingredients to a blender or food processor:

1 cup cottage cheese

2 eggs

1/4 cup rolled oats (optional)

1/2 tsp baking powder

1/4 tsp vanilla extract

Pinch of salt

Blend until smooth, or pulse if you prefer a chunkier texture.

2. Preheat skillet:
Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.

3. Cook the pancakes:
Pour about 2 tablespoons of batter per pancake onto the skillet.
Cook 2–3 minutes until edges are set and bubbles form on top.
Flip gently and cook 1–2 more minutes until golden brown.

4. Serve:
Serve warm with maple syrup, fresh fruit, yogurt, or nut butter.
