8 slices brioche or challah bread

2 tablespoons butter (for frying)

4 ounces cream cheese (softened to room temperature)

2 tablespoons powdered sugar

1/4 teaspoon vanilla extract (optional)

1/2 cup sliced strawberries (fresh or macerated)

Powdered sugar (for dusting)

Optional: whipped cream or strawberry sauce for serving

1. Make the Cheesecake Filling:
In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract (if using) until smooth and creamy.

2. Assemble the Sandwiches:
Spread a generous layer of the cream cheese mixture onto 4 slices of bread. Top with sliced strawberries. Place the remaining 4 bread slices on top to form sandwiches.

3. Fry the Sandwiches:
Heat a large skillet over medium heat and melt the butter.
Fry the sandwiches for about 2–3 minutes per side, or until golden brown and crispy. Add more butter to the pan if needed.

4. Serve:
Let cool slightly, then cut each sandwich in half or quarters. Dust with powdered sugar before serving. Optional: serve with whipped cream or a drizzle of strawberry sauce.
