1/2 red onion sliced
1 English cucumber-about 12 inch- sliced thinly
1/4 cup white sugar
1/2 cup water
1/2 cup vinegar
1 tsp salt
1 tsp whole peppercorns
2 tsp pepper flakes or more

Just slice cucumber and onions thinly. Then set aside.
Wash and sterilize a pint of jar. Add slices of cucumber and onion in the jar. Sprinkle pepper flakes on top. Set aside.
Meanwhile, in a pan, add vinegar, water, sugar, peppercorns and salt. Mix well and let it boil. Simmer for 5 minutes till sugar and salt dissolves. Turn off the stove and pour the vinegar mixture into the jar. Let it cool and keep in refrigerator for at least an hour before eating.
Store this refrigerated pickles up to 1 month in fridge. Enjoy!
