Instructions:
1. Mix Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, salt, and sugar.
2. Add Wet Ingredients:
In a separate bowl, beat the egg, then stir in the milk, melted butter, and vanilla.
3. Combine & Knead:
Add the wet mixture to the dry ingredients. Mix until a dough forms, then knead it gently for about 1-2 minutes until smooth (you can flour your hands a bit if it’s sticky).
4. Roll & Cut:
Roll out the dough on a floured surface to about ¼ inch thick. Use a biscuit cutter, cookie cutter, or even a glass to cut into circles or your preferred shape.
5. Cook:
Heat a skillet or griddle over medium heat. Lightly grease with butter or oil. Cook each pancake for about 2-3 minutes per side or until golden brown and puffed.
6. Optional – Dust or Drizzle:
While warm, sprinkle with cinnamon sugar or drizzle with sweetened condensed milk, honey, or syrup.
