4 large bell peppers
1 lb shrimp, peeled and deveined
4 cloves garlic, minced
4 tbsp butter
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped for garnish

Preheat oven to 375°F.
Cut the tops off the bell peppers and remove seeds and membranes.
In a skillet, melt butter over medium heat and sauté garlic until fragrant.
Add shrimp to the skillet and cook until pink, then remove shrimp and chop into small pieces.
In a bowl, combine shrimp, breadcrumbs, Parmesan cheese, salt, and pepper.
Stuff the bell peppers with the shrimp mixture and place in a baking dish.
Bake for 25-30 minutes, until peppers are tender.
Garnish with chopped parsley before serving.
