300 g sirloin steak (sliced thinly against the grain)
1/2 white or yellow onion (sliced)
4–5 slices fresh ginger
2 cloves garlic (optional, minced)
1 tbsp oil (vegetable or peanut oil)
2 green onions (optional, for garnish)
For the Marinade:
1 tbsp soy sauce
1 tsp cornstarch
1/2 tsp sugar
1 tsp sesame oil
1 tsp Shaoxing wine or dry sherry (optional)
For the Sauce:
1 tbsp oyster sauce
1 tbsp soy sauce
1 tsp dark soy sauce (for color)
1/2 tsp sugar
2 tbsp water or beef broth
1/2 tsp cornstarch
Instructions:
1. Marinate the Beef:
In a bowl, combine sliced beef with soy sauce, cornstarch, sugar, sesame oil, and Shaoxing wine.
Let it marinate for at least 15 minutes while you prep other ingredients.
2. Prepare the Sauce:
Mix all sauce ingredients in a small bowl and set aside.
3. Stir Fry:
Heat 1 tbsp oil in a wok or skillet over high heat.
Add ginger slices (and garlic if using); stir-fry for 20 seconds until fragrant.
Add marinated beef and stir-fry for 1–2 minutes until just browned. Remove beef and set aside.
In the same pan, add sliced onions. Stir-fry for 1–2 minutes until slightly softened.
Return the beef to the pan, pour in the sauce, and stir well to coat.
Cook for another 1–2 minutes until the sauce thickens and everything is heated through.
4. Serve:
Garnish with green onions if desired.
Serve hot with steamed rice.
