2 cups cooked rice (preferably day-old)
1 lb ground beef
1 large onion, diced
1 to 1½ cups mixed vegetables (frozen or fresh—like peas, carrots, corn)
2 cloves garlic, minced (optional but recommended)
2–3 tablespoons soy sauce (to taste)
1 tablespoon oyster sauce (optional, for depth)
1 teaspoon sesame oil (optional, for aroma)
Salt and pepper, to taste
2 eggs (optional, scrambled)
Green onions or parsley, chopped (for garnish)
Instructions:
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Brown the Beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed.
3. Sauté Aromatics & Veggies:
Add diced onion and garlic (if using) to the beef. Cook until onions are soft and fragrant. Add the mixed vegetables and stir for another 3–4 minutes until heated through.
4. Mix with Rice:
In a large bowl, combine the cooked rice with the beef mixture. Add soy sauce, oyster sauce, sesame oil, salt, and pepper. Stir well to combine. If using scrambled eggs, mix them in at this stage.
5. Bake:
Transfer the rice mixture into a greased baking dish. Cover with foil and bake for 20–25 minutes. Remove foil and bake an additional 5–10 minutes to crisp the top slightly.
6. Serve:
Garnish with chopped green onions or parsley. Serve hot!
