For the Creamy Mashed Potatoes:
4 large potatoes, peeled and cubed
1/2 cup warm milk
1/4 cup butter
Salt to taste

Instructions:
Boil the potatoes in salted water until fork-tender, about 15 to 20 minutes. Drain and set aside.
Mash the potatoes with butter, warm milk, and sour cream if using. Season with salt to taste and keep warm.
Season the beef with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides, about 5 to 6 minutes.
Reduce heat to medium, add the butter and garlic to the skillet, and stir to coat the beef in the sauce, about 2 to 3 minutes.
Serve the beef bites over mashed potatoes, drizzling with any extra garlic butter from the pan. Garnish with chopped parsley.
