Instructions:

Add the butter or oil and mix it in with a fork or your fingers until crumbly.
3. Add boiling water
Carefully pour in 1⅓ cups boiling water and stir with a wooden spoon or silicone spatula. Add more water, 1 tablespoon at a time, if needed — the dough should be soft but not sticky.
4. Knead the dough
Transfer to a floured surface and knead for 5–7 minutes until smooth and elastic.
5. Rest the dough
Cover the dough with a damp towel or plastic wrap and let it rest for 30 minutes at room temperature.
6. Divide and roll out
Divide into 12 equal pieces. Roll each one into a ball, then flatten and roll out into thin 8-inch circles on a floured surface.
7. Cook
Heat a dry skillet or griddle over medium-high heat. Cook each tortilla for about 30–45 seconds per side, or until bubbles form and golden spots appear.
8. Keep warm
Place cooked tortillas in a clean kitchen towel to keep warm and soft.
