Ingredients
1 lb medium shrimp, peeled and deveined
12 oz smoked sausage, sliced into ½-inch rounds
½ medium green cabbage, chopped (about 4 cups)
1 small onion, diced
2 cloves garlic, minced
1 medium carrot, thinly sliced (optional)
2 tbsp olive oil
1 tsp Cajun seasoning (or to taste)
½ tsp paprika
Salt and pepper to taste
Fresh parsley (for garnish)
Instructions
Sauté sausage: Heat 1 tablespoon olive oil in a large skillet over medium-high. Add sausage slices and brown for 4–5 minutes. Remove and set aside.
Sauté veggies: Add remaining olive oil. Cook onions and carrots for 2–3 minutes, then add garlic and cook until fragrant.
Add cabbage: Toss in chopped cabbage. Season with Cajun seasoning, paprika, salt, and pepper. Cook for 6–8 minutes, stirring occasionally, until wilted and lightly browned.
Cook shrimp: Add shrimp and browned sausage back to the pan. Cook for another 4–5 minutes until shrimp turn pink and opaque.
Serve: Garnish with parsley. Serve hot in bowls, optionally over cauliflower rice or steamed rice.
