1 ½ cups sour cream
1 cup mayonnaise
1 (1 oz) packet dry vegetable soup mix (like Knorr or Lipton)
1 (8 oz) can water chestnuts, drained and finely chopped (optional, for crunch)
3 green onions, finely sliced
Salt and pepper to taste
Instructions:
1. Prepare the Spinach
Thaw the frozen spinach completely, then squeeze out as much moisture as possible using a clean towel or paper towels.
2. Mix the Base
In a large mixing bowl, combine the sour cream, mayonnaise, and dry soup mix. Stir until well blended.
3. Add Veggies
Fold in the drained spinach, chopped water chestnuts (if using), and green onions. Mix well.
4. Chill
Cover and refrigerate for at least 2 hours, or overnight, to let the flavors meld.
5. Serve
Serve with bread cubes, tortilla chips, crackers, or inside a hollowed-out bread bowl.
