8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp vanilla extract
1 cup diced strawberries
For the French Toast:
8 slices thick-cut bread (brioche, challah, or Texas toast work great)
4 large eggs
1 cup milk (whole milk or half & half preferred)
1 tsp vanilla extract
1/2 tsp ground cinnamon
Butter or oil, for cooking
Instructions
1. Make the Filling:
In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold in the diced strawberries.
2. Assemble the Toast:
Spread about 2 tablespoons of the filling on 4 slices of bread.
Top with the remaining 4 slices to make sandwiches.
3. Prepare the Batter:
In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
4. Dip the Sandwiches:
Dip each stuffed sandwich into the egg mixture, coating both sides well.
5. Cook the French Toast:
Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
Cook the sandwiches for 3–4 minutes per side or until golden brown and cooked through.
6. Serve:
Slice in halves or quarters.
Dust with powdered sugar, drizzle with maple syrup or strawberry sauce, and top with extra fresh strawberries if desired.
