Ingredients:

1 box strawberry cake mix (plus ingredients needed to prepare it—usually eggs, oil, and water)

1/4 cup powdered sugar

8 oz cream cheese, softened

1/2 cup heavy whipping cream (or Cool Whip for shortcut)

1 tsp vanilla extract

Fresh strawberries, finely diced (about 1/2 cup)

Optional: white chocolate or strawberry syrup for drizzle

1. Bake the Cake:

Prepare the strawberry cake according to box instructions.

Pour into a parchment-lined large baking sheet or jelly roll pan to create a thin layer.

Bake until just done (about 12–15 minutes), then let it cool slightly.

 

2. Roll and Cool:

While still slightly warm, gently roll the cake (with parchment) into a log shape. This helps it hold the “sushi” shape later.

Let it cool completely while rolled.

 

3. Make the Filling:

Beat cream cheese, powdered sugar, vanilla, and whipping cream together until smooth and fluffy.

Fold in diced strawberries.

 

4. Assemble the Sushi:

Carefully unroll the cooled cake.

Spread a generous layer of the strawberry cream filling over the surface.

Gently roll it back up tightly into a log (without parchment).

Chill in the fridge for at least 1 hour to firm.

 

5. Slice and Decorate:

Slice the rolled cake into sushi-like pieces (about 1-inch thick).

Optional: drizzle with white chocolate or strawberry syrup, and garnish with more strawberry bits.
