INGREDIENTS
1 tablespoon olive oil
1 ½ pounds boneless skinless chicken breasts, cut into 1-inch bite-sized pieces
1 ½ teaspoons italian seasoning blend
½ teaspoon salt
¼ teaspoon black pepper
3 cups diced fresh tomatoes, roma tomatoes or campari tomatoes work best
2 tablespoons balsamic vinegar
1 tablespoon minced garlic
1 cup shredded mozzarella cheese
2 teaspoons fresh basil, chopped (for garnish)
INSTRUCTIONS
1. Preheat your oven to 375°F (190°C).
2. Heat the olive oil in a large skillet over medium heat. Add the chicken pieces and season with italian seasoning, salt, and black pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken is lightly browned and nearly cooked through.
3. Add the diced tomatoes, balsamic vinegar, and minced garlic to the skillet. Stir well and cook for another 2–3 minutes to combine the flavors.
4. Transfer the entire mixture to a greased 9×13-inch baking dish and spread it evenly.
5. Sprinkle the shredded mozzarella cheese evenly over the top.
6. Bake uncovered for 15–20 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
7. Remove from the oven and garnish with chopped fresh basil before serving.
