Ingredients:

1 cup whole milk

2 cups shredded cheddar cheese

1 tbsp butter

1 tbsp all-purpose flour

1/2 tsp salt

1/2 tsp garlic powder

1/4 tsp onion powder

1/4 tsp cayenne pepper or hot sauce (optional for heat)

1/4 tsp paprika (optional for color and smoky flavor)

1. Make a roux:
In a saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 1 minute, until the mixture bubbles slightly but doesn’t brown.

2. Add milk:
Slowly pour in the milk while whisking. Continue stirring until the mixture thickens slightly, about 2–3 minutes.

3. Add cheese:
Reduce heat to low. Add the shredded cheddar cheese a little at a time, stirring constantly until melted and smooth.

4. Season:
Stir in salt, garlic powder, onion powder, paprika, and cayenne pepper or hot sauce. Mix well and taste. Adjust seasoning as desired.

5. Serve warm:
Use immediately for nachos, tacos, fries, or any cheesy craving!
