Ingredients:
1 package cheese tortellini (fresh or frozen)
1/2 lb Italian sausage (mild or spicy), casings removed
2 cups baby spinach
1 cup marinara or tomato sauce
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tbsp olive oil
Salt, pepper, and red pepper flakes to taste
Instructions:
1. Boil the tortellini according to the package instructions. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
3. Add marinara sauce and simmer for 5 minutes.
4. Stir in the cream and let it warm through.
5. Add spinach and cook until wilted.
6. Toss in the tortellini, sprinkle mozzarella and Parmesan over the top, and mix gently.
7. Cover and cook for 2-3 minutes until the cheese melts.
8. Serve hot with extra cheese or chili flakes on top if desired.
