For the Steak Bites
1 1/2 lbs sirloin steak, cut into 1-inch cubes
Salt and black pepper, to taste
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
1 tablespoon fresh parsley, chopped (for garnish)
For the Mashed Potatoes
2 lbs Yukon Gold potatoes, peeled and cubed
1/4 cup unsalted butter
1/2 cup whole milk (or heavy cream for extra creaminess)
Salt and black pepper, to taste

Make the Mashed Potatoes
Boil the Potatoes
Place the cubed potatoes in a large pot and cover them with water. Add a pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are fork-tender, about 15-20 minutes.
Mash the Potatoes
Drain the potatoes and return them to the pot. Add the butter and milk, and mash until smooth and creamy. Season with salt and black pepper to taste. Cover and keep warm while you prepare the steak bites.
Prepare the Steak Bites
Season and Sear the Steak
Pat the steak cubes dry with a paper towel and season generously with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Once the skillet is hot, add the steak cubes in a single layer (work in batches if necessary to avoid overcrowding the pan).
Sear the steak bites for 2-3 minutes on each side, or until browned and cooked to your desired level of doneness. Remove the steak bites from the skillet and set them aside.
Make the Garlic Butter Sauce
In the same skillet, reduce the heat to medium and add the butter. Once the butter is melted, add the minced garlic and thyme. Cook for 1-2 minutes until fragrant.
Return the steak bites to the skillet and toss them in the garlic butter sauce until well coated. Cook for an additional 1-2 minutes to allow the flavors to meld together.
Serve
Plate the mashed potatoes and top with the garlic butter steak bites. Garnish with fresh parsley and serve immediately.
