10 oz fresh spinach (or 1 package frozen spinach, thawed and well-drained)
1 cup sour cream
1 cup mayonnaise
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 cloves garlic, minced
1/2 tsp onion powder
1/4 tsp nutmeg (optional, for warmth and depth)
Salt and pepper to taste
1 tbsp olive oil
Instructions:
1. Prepare the spinach:
If using fresh spinach: Heat olive oil in a skillet over medium heat. Add the spinach and sauté until wilted (about 3–4 minutes). Let cool slightly, then squeeze out excess moisture and roughly chop.
If using frozen spinach: Ensure it’s fully thawed and squeeze out all excess water.
2. Sauté garlic:
In the same skillet, lightly sauté the minced garlic in the remaining olive oil for 30 seconds until fragrant (don’t let it brown).
3. Mix the dip:
In a mixing bowl, combine sour cream, mayonnaise, Parmesan, mozzarella, onion powder, nutmeg (if using), and the sautéed garlic.
Stir in the chopped spinach.
Season with salt and pepper to taste.
4. Chill or warm (optional):
For a cold dip: Cover and refrigerate for at least 1 hour before serving to let flavors meld.
For a warm dip: Transfer to a baking dish and bake at 375°F (190°C) for 15–20 minutes until bubbly and golden on top.
