10 oz summer sausage, diced
1 pint grape tomatoes, halved
1 cup mozzarella pearls or cubed cheese
1/2 cup sliced black olives (optional)
1/4 cup red onion, finely chopped
1/2 cup chopped cucumber or bell pepper (optional for crunch)
1/4 cup fresh parsley or basil, chopped
For the Dressing:
1/3 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon Italian seasoning
1 clove garlic, minced
Salt and black pepper to taste
Instructions:
1. Cook Pasta:
Boil rotini in salted water according to package directions until al dente.
Drain and rinse with cold water to cool. Set aside.
2. Prepare Ingredients:
Dice the summer sausage.
Halve the grape tomatoes.
Chop any additional veggies and herbs.
3. Make the Dressing:
In a small bowl or jar, whisk together olive oil, red wine vinegar, mustard, Italian seasoning, garlic, salt, and pepper.
4. Assemble the Salad:
In a large bowl, combine pasta, sausage, tomatoes, cheese, olives, onion, and herbs.
Pour the dressing over and toss to coat evenly.
5. Chill:
Cover and refrigerate for at least 30 minutes for flavors to blend.
Toss again before serving.
