Ingredients:
1 lb bacon, diced
2 large onions, thinly sliced
3 cloves garlic, minced
3/4 cup brown sugar
1/2 cup brewed coffee (strong)
1/4 cup apple cider vinegar
1/4 cup whiskey (bourbon or smoky whiskey works great)
1 tbsp maple syrup (optional but adds depth)
Pinch of black pepper
Pinch of cayenne (optional for a little heat)
Instructions:
1. Cook the bacon:
In a large skillet over medium heat, cook the diced bacon until crispy but not burnt. Remove with a slotted spoon and set aside. Drain most of the grease, leaving about 1 tablespoon in the pan.
2. Cook the onions and garlic:
Add the sliced onions to the pan and cook over medium heat until they are soft, caramelized, and golden brown—about 15–20 minutes. Stir often and lower the heat if needed. Add garlic and cook for 1 more minute.
3. Deglaze and simmer:
Add the brown sugar, coffee, vinegar, whiskey, maple syrup (if using), black pepper, and cayenne. Stir well to combine. Bring to a simmer.
4. Add bacon back in:
Return the cooked bacon to the pan. Continue to simmer on low heat, stirring occasionally, until the mixture thickens and becomes jam-like—about 20–30 minutes.
5. Blend (optional):
For a smoother texture, pulse the jam in a food processor a few times, but don’t overdo it—you still want some texture.
6. Cool and store:
Let cool, then store in a jar in the fridge for up to 2–3 weeks. Serve warm or at room temperature.
