Instructions:
1. Mix dry ingredients:
In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. Mix wet ingredients:
In another bowl, beat the egg and mix in buttermilk, melted butter, and vanilla.
3. Combine:
Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix – a few lumps are okay. Fold in the chopped strawberries.
4. Cook:
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour 1/4 cup batter for each pancake. Cook until bubbles form on the surface and edges look set (about 2 minutes), then flip and cook another 1–2 minutes until golden.
5. Topping:
Toss sliced strawberries with sugar or honey. Serve on top of pancakes with whipped cream if desired.
