Ingredients:

2 cups granulated sugar

2/3 cup fresh lemon juice

Zest of 1–2 lemons

1 cup water

Instructions:

1. Prepare a mold or surface:
Lightly oil candy molds or line a baking sheet with parchment paper.

2. Combine ingredients:
In a medium saucepan, mix the sugar, lemon juice, lemon zest, and water.

3. Cook the mixture:
Heat over medium-high, stirring until the sugar dissolves.
Bring to a boil and continue cooking without stirring until it reaches 300°F (150°C) on a candy thermometer (hard crack stage).

4. Remove from heat:
Once it hits temperature, remove from heat immediately.
If desired, you can stir in a drop of yellow food coloring.

5. Pour and shape:
Carefully spoon the hot syrup into molds or drop small rounds onto parchment using a spoon.

6. Cool completely:
Let candies harden at room temperature (about 30–60 minutes).

7. Dust & store:
Dust finished lemon drops with powdered sugar or cornstarch to prevent sticking.
Store in an airtight container.
