Ingredients
4 large flour tortillas (10-inch)
6 large eggs, scrambled
1/2 lb breakfast sausage (crumbled and cooked)
1 cup shredded cheddar cheese (or your favorite cheese)
2 tablespoons butter or oil (for cooking)
Salt and pepper to taste
Optional: chopped green onions, hot sauce, or salsa
Instructions
1. Cook the Sausage
In a skillet over medium heat, cook the crumbled sausage until browned. Drain any excess grease and set aside.
2. Scramble the Eggs
In a bowl, beat the eggs with a pinch of salt and pepper.
Heat 1 tbsp butter in a nonstick pan, pour in the eggs, and scramble until just set (still soft). Remove from heat.
3. Assemble the Roll-Ups
Lay out each tortilla.
Add scrambled eggs in the center, followed by sausage and a handful of shredded cheese.
Roll the tortilla tightly like a burrito (fold in the sides and roll up).
4. Toast the Roll-Ups (Optional but Recommended)
Heat a clean skillet over medium heat and melt the remaining butter.
Place the roll-ups seam-side down and cook for 2–3 minutes per side, until golden and crispy.
5. Serve
Slice in half and serve warm with your favorite dipping sauce or salsa.
