Ingredients:

* ½ cup Red chillies (mild or hot – your choice)
* ½ cup Water
* ½ cup White Sugar
* 1 tsp Fish Sauce
* ½ cup White Vinegar
* 2 tbsp Minced Garlic
* 1 tsp Salt
* 1 tbsp Cornstarch (mix with 2 tbsp water)

Instructions:

1. If you prefer it mild, remove the seeds from the chillies.
2. Finely chop or pulse in a blender for a smoother texture.
3. In a saucepan, combine vinegar, water, sugar, fish sauce, garlic, and chillies.
4. Bring to a boil, stirring until the sugar dissolves.
5. Stir in the cornstarch slurry and simmer for 1–2 more minutes until the sauce thickens.
6. Let it cool completely and store in a clean jar.

Perfect for dipping spring rolls.
Stays fresh in the fridge for up to 1 month.
