1. Activate the yeast (if using active dry yeast):
Mix warm milk (not hot) with sugar and yeast. Let sit for 5–10 minutes until foamy.
(Skip this step if using instant yeast and mix it directly with flour.)

2. Make the dough:
In a large bowl, combine flour, dry milk, salt, and yeast.
Add warm milk, butter (or oil), and egg (if using). Mix until a dough forms.
Knead for 8–10 minutes until smooth and elastic.

3. First rise:
Cover the dough and let it rise in a warm place for 1 to 1½ hours, or until doubled in size.

4. Add the cheese:
Punch down the dough. Knead in shredded cheese or shape the dough and sprinkle cheese on top, depending on the texture you want.

5. Shape and second rise:
Form into a loaf or rolls. Place on a greased or parchment-lined pan.
Let rise again for 30–40 minutes.

6. Bake:
Preheat oven to 180°C (350°F).
Brush top with egg wash (optional) and bake for 20–25 minutes or until golden and cooked through.

7. Cool:
Let cool slightly before slicing. Best served warm!
