For the Bruschetta:
1 baguette, sliced into ½-inch pieces
2 tbsp olive oil (for brushing)
1 garlic clove, peeled (for rubbing)
For the Topping:
1–2 balls of fresh burrata cheese
1 ½ cups cherry tomatoes, halved or quartered
2 tbsp fresh basil, thinly sliced (chiffonade)
1 tbsp olive oil
1 tsp balsamic glaze (plus more for drizzling)
Salt and black pepper, to taste
Instructions
1. Toast the Bread
Preheat oven to 400°F (200°C).
Arrange baguette slices on a baking sheet.
Brush each side with olive oil.
Toast for 7–9 minutes, flipping halfway, until golden.
While still warm, lightly rub each slice with the garlic clove for flavor.
2. Prepare the Tomato Topping
In a bowl, combine cherry tomatoes, basil, olive oil, balsamic glaze, salt, and pepper.
Let sit for 10–15 minutes to marinate.
3. Assemble the Bruschetta
Tear burrata and place pieces on each toasted baguette slice.
Spoon tomato mixture over the top.
Drizzle with extra balsamic glaze and a touch of olive oil.
Garnish with extra basil if desired.
