For the filling:
2 cups cooked chicken breast, shredded
1/2 cup barbecue sauce (your favorite kind)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 red bell pepper, diced
1/4 cup red onion, finely chopped (optional)
2 tablespoons fresh cilantro, chopped (plus extra for garnish)

For assembling:
4 large flour tortillas
1 tablespoon olive oil or butter (for pan-frying)

Prepare the filling: In a bowl, combine the shredded chicken and barbecue sauce. Mix well so the chicken is evenly coated. Set aside.

Assemble the quesadillas: Lay out the tortillas. On one half of each tortilla, sprinkle a mix of cheddar and mozzarella, followed by the BBQ chicken mixture, diced bell pepper, red onion (if using), and a bit more cheese. Sprinkle some chopped cilantro on top.

Fold and cook: Fold each tortilla in half over the filling. Heat a skillet over medium heat and lightly brush with olive oil or melt a bit of butter. Cook each quesadilla for about 2–3 minutes per side, or until golden brown and the cheese is fully melted. Press gently with a spatula for even browning.

Slice and serve: Remove from the skillet and let cool for a minute before slicing into wedges. Garnish with extra cilantro if desired.

Optional dip: Serve with sour cream, guacamole, or extra BBQ sauce for dipping.
