Ingredients
1 pound ground beef
2 medium potatoes
1 medium onion
1 cup sliced carrots
1 cup corn kernels
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon black pepper
1 teaspoon salt
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
Instructions
Preheat your oven to 400°F (200°C).
Prepare a large sheet of aluminum foil, roughly 18 inches long, for each packet you plan to make.
Wash and scrub the potatoes thoroughly, then slice them into thin rounds, about 1/4 inch thick.
Peel the onion and cut it in half, then slice it into thin half-rings.
Peel and slice the carrots into small rounds, about 1/4 inch thick.
In a large skillet, heat the olive oil over medium heat.
Add the ground beef to the skillet, breaking it apart with a spoon or spatula.
Cook the ground beef until it’s browned and fully cooked, about 8-10 minutes.
While the beef cooks, prepare the vegetables.
Place the sliced potatoes, carrots, and onions into a large mixing bowl.
Add the sliced corn kernels to the bowl with the vegetables.
Sprinkle the garlic powder, onion powder, paprika, black pepper, and salt over the vegetables.
Toss the vegetables with your hands or a spoon to coat them evenly with the seasonings.
Once the beef is cooked, drain any excess grease from the skillet and return it to the heat.
Add the Worcestershire sauce and soy sauce to the beef in the skillet, stirring to combine.
Remove the skillet from the heat once the sauces are fully mixed in.
Lay the prepared sheet of aluminum foil flat on a clean surface.
Place half of the seasoned vegetables in the center of the foil.
Top the vegetables with half of the cooked ground beef mixture.
Place 1 tablespoon of butter on top of the beef mixture.
Fold the sides of the aluminum foil up to create a packet, then fold the top and bottom edges tightly to seal the packet.
Repeat the process for the second packet with the remaining ingredients.
Place both foil packets on a baking sheet and transfer them to the preheated oven.
Bake the foil packets for 25-30 minutes, or until the potatoes are tender and the flavors have melded together.
Carefully remove the packets from the oven, being cautious of the hot steam when opening.
Serve the hobo foil packets immediately, enjoying the warm, flavorful meal straight from the foil.
