Directions:
Cook the Sausages:
Cook the breakfast sausage links according to package instructions. Set aside once cooked.
Prepare the Bread:
While the sausages are cooking, remove the crusts from the bread slices. Use a rolling pin to flatten each slice.
Make the Egg Mixture:
In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until smooth.
Assemble the Roll-Ups:
Place one sausage link at one end of a flattened slice of bread. Roll it up tightly, securing with a toothpick if necessary. Repeat with the remaining bread and sausages.
Cook the Roll-Ups:
Heat butter in a skillet over medium heat. Dip each roll-up into the egg mixture, coating it well.
Place the roll-ups in the skillet and cook for 3-4 minutes, turning until golden brown on all sides.
Serve:
