2 tablespoons butter (unsalted)
2 tablespoons all-purpose flour
1 cup milk
8 oz Velveeta (or shredded Monterey Jack for a different flavor)
1 tablespoon hot sauce (optional, adjust to your taste)

Make the Roux: In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking continuously. This helps to cook out the raw flour taste.

Add Milk: Gradually whisk in the milk and bring the mixture to a simmer. Keep whisking to avoid lumps and ensure the sauce thickens evenly.

Add Cheese: Once the sauce is simmering, add the cheese. Stir until the cheese is fully melted and the sauce is smooth. If you’re adding hot sauce, mix it in at this stage.

Serve: Serve the cheese sauce warm, over tortilla chips or your favorite dish.

Tips:
Whisking: Continuous whisking when making the roux is essential to avoid lumps in the sauce.
Cheese Choices: While Velveeta is used for a smooth sauce, feel free to experiment with other cheeses like cheddar or Monterey Jack.
