* 3 cups cooked white rice (preferably cold/day-old)
* 3 tbsp sesame oil
* 1 cup frozen peas and carrots
* 1 small onion, chopped
* 2 tsp minced garlic
* 2 eggs, lightly beaten
* ¼ cup soy sauce

1. Heat Oil & Sauté Veggies
In a large skillet or wok, heat 1½ tbsp sesame oil over medium-high heat.
Add chopped onion, and cook for 2–3 minutes until soft.
Add peas and carrots, cook for another 2–3 minutes. Stir in garlic and cook 30 seconds more.

2. Scramble Eggs
Push veggies to the side. Pour in eggs and scramble until cooked through. Mix with veggies.

3. Add Rice & Sauce
Add in cold rice and the rest of the sesame oil. Break up clumps and stir-fry for 2–3 minutes.
Pour in soy sauce and toss until everything is well coated and heated through.
