1. Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan or line it with parchment paper.

2. In a large mixing bowl, combine the ground beef, milk, eggs, taco seasoning, chopped onion, green chiles, crushed tortilla chips, minced garlic, 1 cup of cheddar jack cheese, and ½ cup of salsa.

3. Mix gently using clean hands or a large spoon until everything is evenly incorporated, but do not overmix.

4. Transfer the mixture into the prepared loaf pan and press it down evenly.

5. Spread the remaining ½ cup of salsa over the top of the meatloaf.

6. Bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (71°C).

7. During the last 10 minutes of baking, sprinkle the remaining ½ cup of cheese over the top and return to the oven until melted.

8. Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped cilantro if desired.
