1. Mango Avocado Salsa

Ingredients:

1 ripe mango, diced
1 ripe avocado, diced
1 tomato, chopped
¼ red onion, finely chopped
1 jalapeño, finely chopped
¼ cup cilantro, chopped
Juice of 1 lime
½ tsp salt

Instructions:
In a bowl, gently combine the mango, avocado, tomato, red onion, jalapeño, and cilantro.
Squeeze in the lime juice and sprinkle with salt.
Toss lightly to avoid mashing the avocado.
Let it sit for 5–10 minutes for the flavors to blend, then serve fresh!

2. Black Bean Corn Salsa

1 can (15 oz) black beans, drained and rinsed
1 cup corn (fresh, canned, or thawed frozen)
1 cup roma tomatoes, diced
1/2 red onion, finely chopped
1 avocado, diced
2 cloves garlic, minced
1 jalapeño, finely diced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
2 tbsp olive oil
Salt and pepper to taste
1/2 tsp cumin (optional for smoky flavor)

Instructions:
In a large bowl, mix together black beans, corn, tomatoes, onion, bell pepper, garlic, jalapeño, and cilantro.

Add lime juice, olive oil, salt, pepper, and cumin. Toss well to combine. Refrigerate for at least 30 minutes to let the flavors meld. Add avocado right before serving.

Great with tortilla chips, in tacos, or over grilled chicken or fish.

3. Watermelon Salsa

Ingredients:
2 cups seedless watermelon, finely diced
1/4 cup red onion, finely chopped
1 small jalapeño, seeded and finely chopped (optional for heat)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Salt, to taste

Instructions:
Dice everything evenly so the salsa is scoopable and well-mixed.
In a medium bowl, gently toss together the watermelon, onion, jalapeño, and cilantro.
Squeeze fresh lime juice over the top, add a pinch of salt, and gently mix. Let sit for 10–15 minutes for flavors to blend.
Serve chilled with tortilla chips, over grilled chicken or fish, or as a side salad.

4. Pineapple Mango Salsa

Ingredients:
1 cup fresh pineapple, diced
1 cup ripe mango, diced
½ small red onion, finely chopped
1 large tomato, diced
1 jalapeño (or chili), seeded & minced
¼ cup fresh cilantro, chopped
Juice of 1 lime
Salt to taste

Instructions:
Combine pineapple, mango, onion, jalapeño, and cilantro in a bowl. Squeeze lime juice over the top and mix gently. Season with a pinch of salt. Chill for 15–20 minutes to let flavors meld (optional, but tasty).
