Ingredients:

6 sausages (your choice)
1 kg (2.2 lbs) potatoes, cut into chunks
250 g (8.8 oz) mushrooms, sliced
2 onions, sliced into rings
3 garlic cloves, minced
3 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon honey
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the Oven:
Preheat your oven to 200°C (400°F).

Wash and cut the potatoes into chunks.
Slice the mushrooms.
Slice the onions into rings.
Mince the garlic cloves.
Mix the Ingredients:
In a large bowl, mix the potatoes, mushrooms, onions, and garlic with the olive oil, Dijon mustard, and honey. Season with salt and pepper to taste.

Assemble the Dish:
Transfer the vegetable mixture to a large baking dish. Arrange the sausages on top of the vegetables.

Bake:
Bake in the preheated oven for 35 to 40 minutes, or until the potatoes are tender and the sausages are cooked through and golden brown.

Garnish:
Once out of the oven, sprinkle with chopped fresh parsley for a pop of color and flavor.

Serve:
Serve hot, alongside a green salad or steamed vegetables for a complete meal.
