Ingredients:

2 pork tenderloins (1–1.5 lbs each)

3 tbsp olive oil

4 cloves garlic, minced

1 tbsp Dijon mustard

1 tbsp balsamic vinegar

1 tbsp soy sauce

2 tsp fresh rosemary (or 1 tsp dried)

1 tsp thyme

1 tsp salt

1/2 tsp black pepper

Optional: 1/2 tsp smoked paprika or chili flakes for a kick

1. Preheat oven to 400°F (200°C). Line a baking dish or roasting pan with foil or parchment.

2. Trim any silver skin or fat from the pork tenderloins.

3. Make marinade/rub:
In a small bowl, whisk together olive oil, garlic, mustard, vinegar, soy sauce, rosemary, thyme, salt, pepper, and paprika if using.

4. Season the pork:
Rub the mixture all over the tenderloins. Let sit for 15–30 minutes (or marinate in the fridge for a few hours if you have time).

5. Sear (optional but recommended):
In an oven-safe skillet, heat 1 tbsp oil over medium-high heat. Sear the pork on all sides until browned (about 2–3 mins per side).

6. Roast in oven:
Transfer the pork to the oven and roast for 20–25 minutes, or until the internal temperature reaches 145°F (63°C).

7. Rest:
Remove from the oven and loosely tent with foil. Let rest for 10 minutes before slicing (this helps retain juices!).
