Ingredients:
3 ripe but firm pears (Bosc or Anjou work well), halved and cored
3–4 oz crumbled feta cheese
2 tbsp dried cranberries
2 tbsp chopped walnuts or pecans (optional, for crunch)
2 tbsp honey (plus more for drizzling)
1 tbsp olive oil or melted butter (for brushing)
Fresh thyme or rosemary (optional garnish)
Pinch of cinnamon (optional)
Instructions:
1. Preheat oven to 190°C (375°F).
2. Prepare the pears: Cut the pears in half lengthwise and scoop out the cores with a spoon or melon baller.
3. Arrange in a baking dish cut side up. Brush the cut surfaces lightly with olive oil or melted butter.
4. Sprinkle with cinnamon if using.
5. Bake the pears (unfilled) for about 15 minutes, until just starting to soften.
6. Stuff the centers with crumbled feta, cranberries, and chopped nuts (if using).
7. Drizzle honey over each pear half.
8. Return to oven and bake another 10–12 minutes, until cheese is slightly golden and pears are tender.
9. Finish with a drizzle of honey and a sprinkle of fresh thyme or rosemary before serving.
