Instructions:
1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
2. Sauté the veggies: In a skillet over medium heat, cook the chopped mushrooms and onions until softened and most of the moisture is gone (about 5–7 minutes). Let cool slightly.
3. Prepare the mixture: In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan, cooled mushrooms/onions, crumbled bacon, Swiss cheese, garlic, eggs, Worcestershire sauce, salt, and pepper. Mix gently with your hands or a fork—don’t overmix.
4. Shape the loaf: Transfer the mixture into the prepared pan or shape into a loaf on a baking sheet. Press it together firmly.
5. Optional topping: Lay a few bacon slices over the top or sprinkle with extra Swiss cheese for added richness.
6. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
7. Rest for 10 minutes before slicing to allow juices to redistribute.
