Ingredients:

1 lb breakfast sausage
8 oz cream cheese, softened
1 can (10 oz) Rotel tomatoes with green chilies, drained
1 1/2 cups shredded cheddar cheese
1 1/2 cups baking mix (Bisquick or similar)
1/2 teaspoon cayenne pepper (optional)

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, combine the sausage, cream cheese, Rotel, cheddar cheese, baking mix, and cayenne pepper (if using).
Mix well until fully combined. Roll the mixture into small balls, about 1 inch in diameter.
Place the sausage balls on the prepared baking sheet.
Bake for 18-20 minutes, or until golden brown and cooked through.
Serve warm as an appetizer or snack!
