Garlic Butter Steak Bites & Herb Roasted Potatoes

1 lb beef sirloin or ribeye, cut into strips
1 lb baby potatoes, halved
3 tbsp olive oil
3 tbsp butter
4 garlic cloves, minced
1 tsp Italian seasoning
1 tbsp fresh rosemary or thyme, chopped
Salt & black pepper, to taste
Fresh parsley, chopped (for garnish)

Roast the Potatoes:
Preheat oven to 425°F (220°C).
Toss potatoes with 2 tbsp olive oil, salt, pepper, and Italian seasoning.
Spread on a baking sheet and roast for 20-25 mins until golden and crispy.

Cook the Steak Bites:
Season steak strips with salt and pepper.
In a skillet, heat 1 tbsp olive oil over medium-high heat.
Sear steak strips for 2-3 mins per side until browned and cooked to your liking. Remove and set aside.

Make the Garlic Butter Sauce:
In the same skillet, melt butter and add minced garlic.
Stir for 1 min until fragrant, then add chopped herbs.

Combine & Serve:
Return potatoes and steak to the skillet.
Toss everything in the garlic butter sauce.
Garnish with fresh parsley and serve hot.

Pro Tip:
Add a splash of balsamic vinegar or lemon juice to the skillet for a pop of acidity and brightness!
