Preheat your oven to 375°F (190°C). Rub the pork loin with olive oil, salt, and pepper.
Roast the pork loin for 45-50 minutes, or until it reaches an internal temperature of 145°F.
While the pork is roasting, prepare the sauce: in a small saucepan, combine apple cider, Dijon mustard, cranberries, and honey. Bring to a simmer for 5-7 minutes, mashing the cranberries as they soften.
