1 lb (450g) sea scallops (patted dry)
4 tablespoons unsalted butter, melted
3–4 cloves garlic, finely minced
¼ cup breadcrumbs (panko for extra crunch)
2 tablespoons grated Parmesan cheese (optional but delicious)
1 tablespoon lemon juice
Zest of 1 lemon
2 tablespoons chopped fresh parsley
Salt and black pepper, to taste
Paprika (for color), optional
Instructions
1. Preheat oven to 400°F (200°C).
2. Prep the scallops: Pat the scallops dry with paper towels to help them brown nicely. Season lightly with salt and pepper.
3. Make the garlic butter:
In a small bowl, mix melted butter, minced garlic, lemon juice, and lemon zest.
4. Arrange scallops in a single layer in a lightly greased baking dish or cast iron skillet.
5. Pour the garlic butter evenly over the scallops.
6. Top with breadcrumbs and cheese: Mix the breadcrumbs, Parmesan, and a sprinkle of paprika. Sprinkle over scallops.
7. Bake for 12–15 minutes, or until scallops are opaque and topping is golden brown. For extra color, broil for 1–2 minutes at the end (watch carefully!).
8. Garnish with chopped parsley and serve immediately with lemon wedges.
