Ingredients:

– 200g grated cheddar cheese
– 1 tbsp butter
– 1 tbsp flour
– 20cl heavy cream
– 10cl milk
– Salt and pepper
– 1 pinch paprika (optional)
Directions:

1. In a saucepan, melt the butter over medium heat.
2. Add the flour and mix well to form a roux. Cook for 1 to 2 minutes without browning.
3. Gradually pour in the milk while whisking to avoid lumps. Thicken the mixture.
4. Stir in the heavy cream, then add the grated cheddar cheese.
5. Stir until the cheese is completely melted and the sauce is smooth.
6. Season with salt, pepper, and a pinch of paprika if desired. 7. Serve immediately with piping hot fries.
