2 lbs chicken breast, cut into 1-inch cubes
1 bell pepper (any color), chopped into 1-inch pieces
1 red onion, chopped into 1-inch pieces
2 cups pineapple chunks (fresh or canned—drain if using canned)
→ Marinade & Seasonings:
2 tbsp soy sauce (low-sodium works great)
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika (smoked for deeper flavor)
½ tsp salt (adjust to taste)
¼ tsp black pepper (adjust to taste)
Instructions
1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper or lightly grease it.
2. In a large bowl, mix soy sauce, olive oil, garlic powder, paprika, salt, and black pepper.
3. Add chicken to the bowl and toss to coat evenly. Let it marinate for at least 10–15 minutes (or longer if time allows).
4. On the sheet pan, spread out the marinated chicken, chopped bell pepper, red onion, and pineapple chunks in a single layer.
5. Bake for 25–30 minutes, flipping halfway through, until the chicken is cooked through and slightly golden, and the veggies are tender.
6. Optional: Broil for 2–3 minutes at the end for a charred, caramelized finish.
