Ingredients:

500 g potatoes (small or medium), cut into pieces

4 boiled eggs

2 cans of tuna in oil or water (approximately 240 g)

1/2 cup black or green olives

1/4 cup olive oil

Juice of 1 lemon

1 tsp mustard (optional)

1 clove of garlic minced or grated

1/2 cup chopped fresh parsley

Salt and black to taste

1. Cook the Potatoes:

Boil the potatoes with salt until soft but firm (15–20 minutes). Get dark and let it cool.

2. Cook the Eggs:

Boil the eggs for 10 minutes. Then peel them and cut them in half or slice them.

3. Prepare the vinaigrette:

Mix the olive oil, lemon juice, mustard, garlic, salt and pepper. Beat with a fork until it emulses.

4. Assemble the Salad:

Mix boiled potatoes with dried tuna.

Add the olives and pour the vinaigrette. Mix with care.

5. Finishing:

Place boiled eggs on top and sprinkle with chopped parsley.

Serves at room temperature or slightly cold.
